Step 1: Rinse

Rinse about 4-cups of Berries

Step 2: Crush

Crush the berries in a food processor. Be careful to not overprocess.



Step 3: Mix

Measure 4-cups of crushed berries to 7-cups of sugar. Mix together until dissolved. We used baker's sugar in the demonstration because it dissolves more quickly.



Step 4: Boil

Place the mixture into a heavy pan and cook to a rapid boil.

Step 5: Stir

Continue stirring and add one envelope of pectin. There are different types of pectin available at the supermarkets. It comes in a liquid form or a powder, both types work well. It also comes with a variety of recipes and directions to follow. After you have added your pectin, time it for one more full minute on a rapid boil. Then, remove from the heat.

Step 6: Boil Water

Bring some water to a full boil in a large canning pot and add clean, empty jelly jars. Place lids and rims into another pan and bring to a low boil. It is important to have your jars and lids hot when canning.

Step 7: Fill Jars

Take one jar out of the canner at a time and ladle hot jam into the jar filling it about 1/8 inch from the rim.

Step 8: Remove Bubbles

Run a table knife around the edges of the jar to release any air bubbles. Clean off the rim with a damp cloth to remove any spilled jam or seeds.



Step 9: Hot Water Bath

Place hot lid and rim on jar and tighten. When you have filled all your jars, place them back into the hot water filled canning pot on a rack and bring to a boil for 10-15 minutes.

Step 10: Remove Jars

Remove the jars from the canner and place on a kitchen towel on the counter or table to cool. When you hear the popping sounds you will know your jars are sealed.

Step 11: Enjoy

Canning is such a rewarding process on so many levels. You control what you put into it and you have the satisfaction of doing it yourself. Enjoy it and share it with others.
