Cattails are an incredible wild edible as they can be enjoyed year-round. Cattail shoots are best harvested in the spring when they are young and tender. The roots can be harvested from late fall to early spring. If harvesting the heads, be sure to get them in the spring as well before they turn brown. Some also like to collect the pollen during the first part of the summer.
As cattails are very easy to identify, always Be careful to not confuse cattails with the poisonous Iris.
